Diego Ferrari

Diego was born in Milan and started working in his local “ristorante” when he was just 14 years old.  At the age of 20 he chose to move to Paris, learn a new language and pursue a culinary career underneath the guidance of the famous Alain Ducasse.  Before starting this venture with wife Emily, Diego spent three years as Head Chef of Le Gavroche**.

Emily Roux

Emily was born and raised in London into the most gastronomic of families.  Her passion for food started at a young age and she has continued to follow in her father’s footsteps dedicating her life to culinary excellence.

Eugenio Simonelli

Born in the small town of Fiuggi near Rome, Eugenio has always had a passion for hospitality. He worked for a total of 7 years in several hotels and restaurants in the dynamic cities of Venice and Rome. His passion for elegance and refined hospitality brought him to work in London at Le Gavroche**, and now Eugenio manages the front of house team at Caractère.

Romeo Bisacchi

For as long as he can remember, Romeo has had a passion for hospitality and wine. Born in Monaco, he grew up in Genova, and worked from a young age in a family-run company responsible for some of the country’s most exclusive and high profile parties and weddings. After attending ALMA he later became part of the team at the prestigious 3 Michelin star restaurant Enoteca Pinchiorri. Romeo has been looking after the wine list at Caractère from day one.
